Why it is ours

Black cowboys worked the western plains and hunted the game that lived there. Pronghorn was part of the trail and frontier diet of Black ranch hands and homesteaders who fed themselves off the land they worked.

What it does

Pronghorn is some of the leanest red meat on the continent — a wild grass-and-sage diet builds deep-red muscle that is extremely low in saturated fat, high in heme iron, B12, and zinc, with a favorable omega-3 to omega-6 ratio versus grain-finished beef. This is the ancestral-protein-was-leaner principle at its extreme: real red meat with the fat profile of fish-adjacent nutrition. Strong support for anemia, heart health, and muscle maintenance.

How it is cooked

Pronghorn is so lean it must be cooked rare to medium-rare and rested — past medium it turns dry and develops a strong sage-tinged flavor. Sear hot and fast, slice against the grain. Tougher cuts braise or grind well. Trim sinew and the strong-flavored fat.
