Why it is ours

Chicken wings are their own cultural food in Black America. Chicago mild sauce, DC mumbo sauce, Atlanta lemon pepper wet, Baltimore Old Bay wings — every Black city has its own wing culture. Wing spots and carryout shops built on wings are pillars of Black neighborhood commerce. The cookout wing basket sitting next to the ribs is as fundamental a cookout image as any.

What it does

Chicken wings deliver protein, niacin, zinc, and B6 in a format that is genuinely enjoyable. The skin adds saturated fat and frying adds linoleic acid from seed oils — the wings themselves are nutritionally valid. Baked or grilled wings retain the protein profile at lower calorie cost.

How it is cooked

Dry-brine wings overnight with salt, baking powder, garlic powder, and smoked paprika — the baking powder draws moisture out and creates the crispiest skin. Bake at 425°F on a rack for 40-45 minutes, flipping halfway. Toss in sauce after baking, not before, to preserve the crunch. For frying: 375°F in fresh oil, 8-10 minutes until deep golden.
