Why it is ours

No New Year's table is complete without a pot of collards. Pot likker was survival medicine during enslavement, drunk straight or sopped with cornbread.

What it does

Collards deliver more calcium per calorie than milk. Glucosinolates activate detox enzymes and may reduce colon cancer risk — Black Americans die from colorectal cancer at 20% higher rates than white Americans.

How it is cooked

Wash leaves individually, strip center rib, stack and chiffonade or tear. Braise low and slow.
