Colossus Pea

A big, meaty purple-hull crowder pea — the giant of the field-pea world. One of the heartiest, most filling peas in the Southern garden.

Why it is ours

Colossus peas were valued for stretching a meal — a small handful swelled into a full pot. For families feeding many on little, a pea that filled the belly was wealth. That economy of the table is central to Black Southern foodways.

What it does

The large seed packs concentrated protein and resistant starch, producing strong satiety that supports weight management — a meaningful lever against the obesity-driven diabetes burden. Low glycemic load steadies blood sugar; soluble fiber lowers cholesterol; potassium and magnesium support healthy blood pressure. A genuinely filling plant protein at pennies per serving.

How it is cooked

Larger peas benefit from a short soak. Simmer 60-75 minutes with onion and smoked seasoning until creamy. The size means a thick, hearty pot that eats like a meal on its own.
