Crayfish Powder

If dawadawa is the earth in Nigerian cooking, crayfish powder is the sea. Together they make the two-part umami chord that every authentic egusi soup, okra soup, or pepper soup plays. If you grew up Nigerian or around Nigerians, you know exactly what we're talking about. If you didn't — this is what that smell is.

Why it is ours

Crayfish powder is one of the most accessible West African specialty ingredients — available at West African grocers in virtually every city with a Nigerian community. Atlanta, Houston, Dallas, Maryland, and New York have multiple reliable sources. Black American cooks building a West African pantry should acquire crayfish powder before any other specialty ingredient — it is the most immediately impactful flavor upgrade.

What it does

Dried shrimp concentrate is one of the highest protein-density foods available — 60-70% protein by weight when ground, providing all essential amino acids in bioavailable form. Astaxanthin — the carotenoid that makes shrimp pink — is a potent antioxidant 6,000 times more powerful than vitamin C in singlet oxygen quenching. Iodine concentration in dried marine shrimp powder supports thyroid function — critical for Black American women who have high rates of undiagnosed hypothyroidism and Hashimoto's disease. Zinc content in concentrated form supports immune function and wound healing. Marine omega-3s (EPA, DHA) in small but bioavailable amounts support cardiovascular and neurological health. Calcium in the ground shells provides bioavailable calcium without dairy.

How it is cooked

Used in small amounts — 1-2 tablespoons of crayfish powder per large pot of soup. Add during cooking, not at the end — the flavor needs heat to bloom. Combine with iru/dawadawa as the two-part umami base for any West African soup. Available at Nigerian and West African grocery stores in zip-lock bags or airtight containers. Refrigerate or freeze for extended freshness.
