Atlantic croaker is a lean, white-fleshed fish with moderate omega-3 content and excellent mineral profile. The potassium-to-sodium ratio is favorable for blood pressure management — critical for the Black American population where hypertension prevalence reaches 55-75% by age 50. Selenium (35mcg, 64% DV) and B12 (2.0mcg) together support both thyroid function and nervous system integrity. Research in Gulf Coast fishing communities — which include significant Black American populations — has documented croaker as a traditional protein source associated with better cardiovascular markers in communities with high fish consumption patterns. The DART-2 study and subsequent meta-analyses confirm regular fish consumption reduces cardiovascular mortality by 15-20%, with maximum benefit in populations with the highest baseline inflammation (which includes Black American communities under Weathering Hypothesis stress).
Widely available fresh at coastal US fish markets (Atlantic and Gulf Coast states) and at some inland markets. Whole fish, skin-on, is the preferred preparation — the skin contains significant flavor compounds. Fry whole in lard or coconut oil with a simple seasoned cornmeal crust for the Black American tradition; bake whole with West African spices for the ancestral tradition.
