Why it is ours

Curry goat is the Saturday-soup-and-Sunday-dinner centerpiece of Caribbean Black communities in Brooklyn, Miami, and the Bronx, and it has crossed deeply into Black American food culture. The blend is the gateway many Black Americans use into Jamaican cooking.

What it does

Jamaican curry leans heavy on turmeric, so curcumin's NF-kB anti-inflammatory action is front and center — and the allspice (pimento) and black pepper in many blends supply eugenol and piperine to enhance absorption. Fenugreek in the blend has its own blood-sugar-steadying reputation relevant to T2D. The slow-braise method extracts the fat-soluble curcumin into the gravy. The value is real; the salt and the fatty cuts of goat are the things to manage.

How it is cooked

Bloom in hot oil with onion, garlic, ginger, and scotch bonnet before adding the meat to 'burn the curry' — this toasts the spices and deepens flavor. Then slow-braise. Marinate the goat in the blend overnight for depth.
