Why it is ours

What it does
Fermentation creates beneficial Bacillus subtilis bacteria. Lipase and amylase support digestion. Adds umami without significant sodium — directly addressing the hypertension-salt dilemma.
How it is cooked
Add 1/4 to 1/2 tsp to soups or stews at the start. Fry briefly in oil with onions to bloom flavor. Use wherever salt or MSG would be used.
