Why it is ours

Emmer wheat / farro is available at mainstream grocery stores as a premium grain. Its Biblical connection (Ezekiel 4:9 bread) and African origin story (ancient Egypt) make it culturally relevant to the Black Church tradition that is central to APEX's faith integration layer.

What it does

Emmer wheat has a lower glycemic index than modern wheat flour (GI ~40-50 vs. white wheat ~70) due to its more resistant starch structure and different gluten protein organization. The protein content (25% more than modern wheat) makes it superior for satiety and muscle maintenance. Many people with gluten sensitivity (not celiac disease) tolerate emmer better than modern wheat — the ancient gluten structure is different from modern high-yield wheat's gluten. The high fiber feeds gut bacteria and provides prebiotic benefit. As the probable 'grain of Egypt' that fed enslaved Israelites in Egypt, emmer wheat carries Biblical significance for the Black Church tradition.

How it is cooked

Cook like a grain: 2.5 cups water per 1 cup farro, simmer 20-30 min (semi-pearled) or 45-60 min (whole). Use in grain bowls, soups (add to lentil soup for superior protein and texture), as a rice substitute, or cold in salads.
