Fermented Carrots

Carrot sticks packed in a salt brine with garlic, ginger, and dill, soured by wild lactic acid bacteria into crunchy, tangy probiotic snacks. The gentlest, sweetest gateway ferment — kid-friendly, beta-carotene-rich, and alive.

Why it is ours

Cheap, available everywhere, and beloved by children — fermented carrots are an accessible first ferment that turns a bag of carrots into a probiotic snack the whole family will eat.

What it does

Lacto-fermentation seeds carrot sticks with live Lactobacillus probiotics and organic acids that support the gut microbiome and intestinal barrier, while the fermentation preserves and even concentrates the carrots' beta-carotene — a provitamin-A antioxidant supporting eye health, immune function, and skin. The fiber acts as a prebiotic feeding butyrate-producing gut bacteria, and the mild souring lowers the glycemic impact of the carrots' natural sugars. As a crunchy, naturally sweet ferment, fermented carrots are the easiest way to bring children and ferment-skeptics into the probiotic fold, building a microbiome that, through the gut-brain axis, supports mood and stress resilience.

How it is cooked

Cut carrots into sticks or coins, pack into a jar with garlic, sliced ginger, and dill, and cover with a 2-3% salt brine. Weight below the surface and ferment at room temperature 4-7 days until tangy and still crunchy. Refrigerate.
