Why it is ours

One of the most universally prepared vegetables in Black Southern cooking. Every grandmother had a version. The act of snapping beans together is a communal ritual in Black American households. Church potlucks, family reunions, and Sunday dinners are incomplete without them.

What it does

Vitamin K supports bone density, a concern for Black women post-40. Folate is critical for pregnancy. Low glycemic load makes them safe for T2D management. Slow cooking preserves more nutrients than pressure cooking.

How it is cooked

Snap ends by hand, string if using heirloom varieties. Simmer low and slow in seasoned water or broth with smoked turkey neck or wing. Add onion, garlic, and a pinch of crushed red pepper. Cook 45-90 minutes until beans are fully tender and pot liquor is rich.
