Green Peas

The most underestimated protein in the grocery store freezer section. Frozen green peas are often more nutritious than fresh — frozen within hours of harvest, vitamin C is preserved at levels exceeding 'fresh' peas that may have sat for days.

Why it is ours

Budget tier 1 — a 12oz bag of frozen peas costs under $1.50 and contains more vitamin C than a bell pepper. Black American households with limited grocery access can get meaningful nutrition from the freezer section. Peas in rice (Southern style) is a simple ancestral combination still practiced today.

What it does

Green peas deliver lutein and zeaxanthin — the carotenoids that protect the macula from UV and oxidative damage. Diabetic retinopathy is the leading cause of blindness in Black Americans, and lutein intake is among the few nutritional factors with clinical evidence for macular protection (AREDS2 trial). Pea protein isolate has emerged as a top-studied plant protein for blood pressure reduction — a 2020 systematic review found pea protein reduced systolic BP by 6.4 mmHg. That's pharmacologically meaningful at the population level.

How it is cooked

Frozen: microwave or steam 3-4 minutes directly from frozen — do not overcook, they turn mushy. Fresh: shell and simmer 2-3 minutes. Add peas at the end of any dish to preserve color and nutrition.
