Why it is ours

The sweet potato is the Gullah survival crop — easy to grow in sandy island soil, storable through winter in a banked mound, endlessly adaptable. Sweet potato bread is the resourceful island baker's answer to a full root cellar: nothing wasted, the harvest carried forward into bread.

What it does

Sweet potato is one of the densest food sources of beta-carotene (provitamin A), supporting eye health, immunity, and skin, plus potassium for blood pressure and fiber for digestion and glycemic control. Built into a bread with whole grain and minimal added sugar, the sweet potato's own sweetness and fiber make this a more blood-sugar-stable baked good than refined flour breads.

How it is cooked

Mash roasted sweet potato and fold into a batter of flour or cornmeal, egg, a little fat, leavening, and warm spices (ginger, nutmeg, cinnamon). Bake at 350°F until set and a tester comes clean. Roasting the sweet potato first deepens flavor and lets you cut added sugar.
