The Henderson bush lima made limas a dependable home-garden crop — early, compact, and heavy-bearing. For families relying on the garden, a bean that produced quickly and reliably was a hedge against the hungry months.

What it does

Baby limas deliver high potassium and magnesium — the two minerals most protective against hypertension and most depleted under chronic stress in the Weathering framework. Their soluble fiber lowers cholesterol, resistant starch steadies blood sugar, and folate supports cardiovascular methylation. A creamy, low-fat, budget protein with a strong mineral profile.

How it is cooked

Soak dried beans, drain, and simmer 50-70 minutes until tender and creamy. Fresh limas cook in 25-35 minutes. As a bush type they ripen early and all at once. Always cook fully until soft.
