Why it is ours

Available frozen at Black-serving groceries, particularly around holidays. Pre-cleaned versions recommended.

What it does

Like chitterlings, hog maws carry more psychosocial than nutritional medicine. The collagen content offers modest joint benefit; the iron and B12 are present but not exceptional. What hog maws ARE is cultural ceremony — the food that says 'we ate what they refused, and we made it ours.' APEX preserves them for occasion eating with the same food-safety rigor as chitterlings.

How it is cooked

Clean meticulously: pre-cleaned versions available frozen and recommended for food safety. Triple-rinse, blanch with vinegar, then slow-cook 3-4 hours with onions, garlic, hot peppers, and herbs. Often cooked with chitterlings as the traditional pairing.
