Why it is ours

Rum cake is the holiday cake that circulates — it goes from house to house, wrapped in foil, as a gift. Receiving a rum cake meant someone cared enough to spend the time and money. It is a cake that carries relationship.

What it does

Rum cake is a treat-only dessert. The alcohol in the rum largely bakes off, but the sugar soak (butter, sugar, rum poured over warm cake) adds significant sugar and caloric density. No therapeutic claim. The vanilla pudding mix in the batter adds sodium. Enjoy as a holiday indulgence, not a regular treat.

How it is cooked

The rum soak is the entire technique: butter, sugar, and dark rum are combined and poured over the cake while it is hot and still in the pan, then poured over again after inverting. The cake must be warm to absorb the soak. Use dark rum — light rum is too subtle. Some families substitute bourbon for a more American flavor profile.
