Kombucha

Effervescent, slightly sour fermented tea produced by SCOBY (Symbiotic Culture of Bacteria and Yeast). Contains Acetobacter, Gluconobacter, and various Lactobacillus and Bifidobacterium species. Also contains organic acids (acetic, gluconic, glucuronic), B vitamins, and trace amounts of alcohol (0.5-3%). The liver-detoxification benefit comes from glucuronic acid — the same acid the liver uses to tag toxins for excretion.

What it does

The glucuronic acid pathway is the specific liver benefit. Glucuronic acid in kombucha supports the intestine and liver in processing what the body needs to clear — the same conjugation process the liver uses for phase II detoxification. For the APEX population with higher pharmaceutical burden (more prescriptions per capita for chronic disease management), supporting phase II detox is practical intervention. The probiotic benefit compounds with sauerkraut and other fermented foods — building microbiome diversity. Each fermented food introduces different bacterial strains. Diversity of probiotic intake is more important than quantity of any single strain.

How it is cooked

Store-bought: refrigerated section at most grocery stores (GT's, Health-Ade brands). Choose low-sugar varieties (under 4g sugar/serving) — some commercial kombucha is now very high in added sugar and loses most of its medicinal benefit. Home brew: tea + sugar + SCOBY + starter kombucha, ferment 7-10 days. Home brewing reduces cost from $4/bottle to under $0.25/bottle.
