Lentil-walnut 'meat' is a favorite of health-forward Black plant-based cooks who want taco night and pasta night without soy, gluten, or a package of additives — proof that whole food can do the job convenience products claim.

What it does

This is whole-food plant protein at its most intelligent: lentils supply protein, soluble fiber, folate, and iron, while walnuts add plant omega-3 (ALA) and polyphenols that fight the chronic inflammation behind the weathering Black bodies carry. Together they make a complete, anti-inflammatory protein with no extraction, no isolate, and no additives — the opposite of ultra-processed fake meat. Replacing taco beef with lentil-walnut crumble cuts saturated fat to near zero and adds fiber that lowers cholesterol and steadies glucose. Pair with the vitamin C in salsa and lime to lift the non-heme iron.

How it is cooked

Pulse cooked brown or green lentils with toasted walnuts in a food processor — keep it coarse, not paste. Season with cumin, chili, smoked paprika, garlic, and a splash of soy sauce or tamari, then brown in a skillet to dry and crisp it. Toasting the walnuts first deepens the flavor.
