Lupini Beans

Yellow bean typically sold cooked and brined. Raw lupini must be soaked for days to remove bitter alkaloids (lupin alkaloids); properly prepared lupini are safe and delicious. One cup cooked provides 25.8g protein (highest of any legume), 4.6g net carbs (lowest of any legume), 19g fiber, 50% DV iron, 29% DV calcium — with a glycemic index under 15 (lower than any other legume or grain).

Why it is ours

Available at Italian and Mediterranean grocery stores. Growing mainstream availability. Online from lupini specialty brands (Lupini by Brami is widely distributed). Very affordable in jarred form.

What it does

Lupini's protein density (25.8g/cup) exceeds soybeans (22g/cup) and all other common legumes — making it the highest plant protein legume in the database. The glycemic index below 15 is the most remarkable metabolic property: lupini beans generate virtually no blood glucose response compared to kidney beans (GI 28-40), black beans (GI 30-35), and lentils (GI 18-30). This extreme low glycemic response is due to the combination of 25.8g protein + 19g fiber + resistant starch — all of which slow and reduce glucose absorption. Multiple clinical studies have demonstrated lupini bean supplementation significantly reduces post-prandial glucose in type 2 diabetics. The calcium at 29% DV makes lupini one of the highest plant calcium sources available — critical for the Black community's calcium deficiency and osteoporosis epidemic. The iron at 50% DV per cup (though non-heme, less bioavailable than heme) addresses iron deficiency in a plant-based format.

How it is cooked

Commercial lupini: sold in jars or packets (brined, already prepared). Eat as a snack — squeeze out of the skin, pop into mouth. Available at Italian, Portuguese, and Greek markets. Online from specialty suppliers. Can also be cooked in soups and stews. Raw lupini REQUIRE 7-14 days of soaking with multiple water changes to remove alkaloids — buy prepared.
