Why it is ours

Moi moi is sold at Nigerian restaurants, parties, and markets across the US diaspora. For Nigerian diaspora communities, moi moi in tin foil packages is a celebration food and a comfort food.

What it does

Moi moi's steaming preparation preserves more folate than frying (heat-stable nutrients are less affected). The absence of deep frying reduces caloric density significantly compared to akara while maintaining the same protein profile. Added sardines or eggs further increase protein and omega-3 content. The resistant starch from black-eyed peas supports gut health and blood glucose management. Moi moi with sardines is arguably the highest-quality protein snack in the West African ancestral food repertoire.

How it is cooked

Soak black-eyed peas overnight, peel, blend with peppers, onion, and palm oil or vegetable oil. Add crayfish, sardines (or other protein), egg. Pour into greased containers (aluminium foil, leaves) and steam 40-50 minutes. Check for doneness — should be firm like pudding.
