What it does

Nutritional yeast is the most practical solution to the lactose-intolerance-plus-cheese-craving problem that affects 75-95% of Black Americans (lactose intolerance prevalence in this population is far higher than in white Americans, reflecting different lactase persistence genetics). It delivers cheese-like flavor without lactose, making dairy-free cooking palatable for households who never digested dairy well anyway. The B12 content (when fortified — read labels) is comparable to the B12 in a serving of beef, making it a reliable B12 source for those reducing or eliminating animal foods. The complete amino acid profile and the immune-modulating beta-glucans add layered benefit. For Black households on plant-based or flexitarian eating, this is a Tier-1 staple.

How it is cooked

Sprinkle on popcorn, roasted vegetables, pasta, salads, soups, scrambled eggs, or tofu. Stir into sauces and dressings. Use in vegan cheese sauces (combined with cashews and lemon for cheese flavor). Look for FORTIFIED with B12 (most brands are, but verify on label).
