For Black American families engaging with Yoruba culinary tradition — which represents one of the largest ancestral populations transported to the Americas — panla is an accessible entry point.

What it does

The smoking and drying of mackerel concentrates its already exceptional nutrient profile — omega-3 content reaches approximately 3g per 100g dried weight (versus 2.5g fresh). The critical distinction between panla and fresh mackerel is the Maillard reaction products formed during smoking, which create additional antioxidant compounds including phenols and carbonyls that are absent in fresh or canned mackerel. Research on smoked oily fish from University of Ibadan (2021) confirmed that traditionally smoke-dried mackerel retained 85-90% of omega-3 content despite the heat processing. Selenium concentration makes panla one of the highest-selenium foods in the West African diet — critical for thyroid function affecting Black women at elevated rates.

How it is cooked

Available at West African grocery stores, sold whole smoked or in pieces. Requires rehydration — soak in warm water for 20-30 minutes before using. Remove large bones after soaking. Use as you would use stockfish — in soups and stews as the protein and flavor base. The concentrated flavor means small amounts go far — 2-3 oz of panla can season a large pot of soup.
