Raw cacao and dark chocolate 85%+ contain the highest flavonoid content of any food — specifically epicatechin and catechin, which have documented ACE-inhibiting (blood pressure reducing) activity. A meta-analysis of 24 randomized trials found dark chocolate significantly reduced systolic blood pressure by 2.8 mmHg and diastolic by 2.2 mmHg.

What it does

Epicatechin in dark chocolate activates nitric oxide production in endothelial cells — nitric oxide dilates blood vessels, directly reducing blood pressure. This is the same mechanism as the popular blood pressure intervention L-arginine supplements, delivered through food. The magnesium content is significant: 2 squares of 85%+ dark chocolate provide approximately 15% daily magnesium. Anandamide (the 'bliss molecule') in cacao is the same compound produced by the brain during exercise and is one mechanism for cacao's mood-lifting effect. The theobromine is a mild bronchodilator and cardiovascular stimulant — gentler than caffeine.

How it is cooked

85-90% dark chocolate (Lindt 90%, Green & Black's 85%, Endangered Species 88%): 1-2 squares (10-20g) daily. The sweetness drops dramatically above 85% — acquire the taste gradually. Raw cacao powder: 1 tbsp in smoothies, oatmeal, or golden milk for pure flavonoid delivery without any added sugar. Raw cacao nibs: sprinkle on yogurt or oatmeal.
