The smell of beans cooking all day is the smell of a Monday when everything was right. Louis Armstrong's 'Red beans and ricely yours' is the most loving food signature in music history.

What it does

Red kidney beans have 7.4g fiber per 100g — one of the highest fiber concentrations of any legume. This fiber is primarily resistant starch (prebiotic) and soluble fiber that binds LDL cholesterol and bile acids, promoting cholesterol clearance. Combined with rice (the amino acid complementation principle), red beans and rice achieves complete essential amino acid coverage with no animal protein required. How it is cooked

Soak red kidney beans overnight. Sauté onion, celery, bell pepper (the Holy Trinity) in butter or oil. Add garlic, bay leaves, thyme, cayenne.
