She-crab soup belongs to the coastal Black cooks of Tidewater Virginia and the Lowcountry who prepared it in fine households and carried it home to their own tables. The 'she' is the female crab, prized for the roe — a knowledge of the Bay that came from the watermen and pickers.
The crab and roe deliver the nutrition — zinc, selenium, B12, and high-quality protein — while the roe adds extra omega-3s. The challenge is the cream and butter base, which loads saturated fat. Rehabilitated with evaporated skim milk or a light blend, the soup keeps its crab benefits without the heavy dairy fat that strains a heart already at higher disease risk.
