Why it is ours

The sweet potato is the South's truest provision crop — it fed enslaved and free Black families through winters when little else kept. Milling it into flour stretches a harvest across a year and puts that orange nourishment into bread, pancakes, and porridge without the candied-yam sugar load.

What it does

Sweet potato flour keeps much of the root's beta-carotene, the orange pigment the body converts to vitamin A for eyesight, immune defense, and skin repair. It is gluten-free, so it serves celiac and gluten-sensitive households, and its fiber gives it a lower glycemic load than refined wheat flour — useful in a community carrying a heavy diabetes burden, though it is still a concentrated starch and portion matters. The natural sweetness means baked goods need less added sugar, a real win for blood-sugar control. Purple and orange cultivars add anthocyanins and extra antioxidants. Pairing it with a little fat (the carotenoids are fat-soluble) improves vitamin A absorption.

How it is cooked

Substitute for up to 30% of wheat flour in muffins, pancakes, biscuits, and quick breads; it browns fast and adds moisture, so watch oven time. Use as a gluten-free thickener for stews and gravies. Whisk into warm water or milk for an instant sweet-potato porridge. Its natural sweetness lets you cut added sugar in any recipe.
