Why it is ours

Eagle Brand is the backbone of Black Southern dessert culture. No can, no icebox pie. No icebox pie, no church potluck dessert table. The can appears in every hand-written recipe card in every Black grandmother's recipe box.

What it does

High sugar content — about 22g per 2 tablespoons. Not a nutritional food. A baking ingredient. Its role is enabling desserts that brought joy and celebration to tables where fresh ingredients weren't always accessible.

How it is cooked

Lemon icebox pie: mix with lemon juice and egg yolks, pour into graham cracker crust, bake at 325°F for 15 min, refrigerate. Caramel: submerge unopened can in boiling water for 3 hours. Fudge: combine with peanut butter, butter, and powdered sugar.
