Made from pineapple RINDS and CORE (the most nutritionally active parts of the pineapple that contain the highest bromelain concentration) + brown sugar + cinnamon + water, fermented 2-3 days. Contains: live Lactobacillus cultures (from wild fermentation on the pineapple skin), bromelain (concentrated in the pineapple core), active pineapple polyphenols, and the cinnamon's anti-inflammatory cinnamaldehyde. Alcohol: 0.5-2% (less than kombucha).

MAKE AT HOME (simple zero-waste fermentation): Rinds + core from 1 whole pineapple + 1 cup brown sugar (or piloncillo) + 2 cinnamon sticks + 2 whole cloves + 2 quarts water. Combine in a covered jar or pot. Let sit at room temperature 2-3 days — taste daily. Ready when slightly tangy and lightly effervescent (day 2-3). Strain and refrigerate. Serve cold over ice. Drink within 1 week. Note: a small amount of white foam or film on top is normal (wild yeast) — skim off and drink. A pink/red color indicates good fermentation.
