Thiof

Thiof is Senegal's soul food. Ceebu Jën — rice and fish — is the dish that Wolof grandmothers made on the same coast where slave ships departed. The Lebou people fished these same Atlantic waters for a thousand years. When you eat thiof, you're tasting the meal that survived on the side of the water that didn't get on the boat.

Why it is ours

Thiof is most accessible to Black American families in cities with large Senegalese and Gambian communities, particularly New York City (Harlem, Bronx) and Atlanta. Senegalese restaurants serve thiéboudienne — this is the entry point. Black American families who discover ceebu jën frequently report it feeling like coming home to a taste they can't explain.

What it does

White grouper carries exceptional selenium content — 55mcg per 100g, nearly the full daily value — making it one of the most potent thyroid-protective seafoods available. Selenium activates iodothyronine deiodinase, the enzyme converting T4 to active T3 thyroid hormone. Thyroid disease affects Black women at 2x the rate of white women, often going undiagnosed. Iodine content (130mcg) further supports thyroid function. The omega-3 EPA/DHA combination targets the arachidonic acid pathway — directly reducing the prostaglandin-driven inflammation elevated by chronic racial stress. Magnesium (35mg per 100g) addresses the depletion caused by cortisol dysregulation in the Weathering pathway.

How it is cooked

Available fresh at seafood specialty stores in cities with Senegalese communities (New York, Washington DC, Atlanta). Also available frozen at some West African markets. The traditional preparation — Ceebu Jën — stuffs the fish with a rof paste (parsley, garlic, scotch bonnet, dried fermented shellfish) then braises over tomato-onion sauce with vegetables and rice. Can be pan-seared simply with garlic and citrus. The firmness makes it suitable for grilling whole.
