Why it is ours

Tilapia is the fish you'll find in every urban grocery store, ALDI, and Walmart serving Black neighborhoods. It democratized fish consumption in Black households.

What it does

Tilapia is an excellent lean protein with very low fat and very low mercury. Farm-raised tilapia from the US, Canada, or Ecuador has better omega-6 profiles than tilapia farmed in China — worth checking the label.

How it is cooked

Fillets cook in 4-5 minutes per side on a hot skillet. Season aggressively — tilapia is a blank canvas that needs smoked paprika, garlic, cumin, cayenne, or hot sauce to sing.
