Tuwo Masara (Hausa Corn Swallow)

Tuwo masara is the Hausa corn swallow — ground dried corn cooked into a smooth, firm mound eaten by hand with soups. It is the bridge food between the Hausa food system and the American South: enslaved Africans who knew tuwo masara recognized cornmeal mush and grits as approximations of their homeland swallow food and incorporated corn readily into their diet. Tuwo masara has a slightly grainy texture and more pronounced corn flavor than tuwo shinkafa.

Why it is ours

Tuwo masara is the cultural ancestor of Southern grits. When enslaved Africans from corn-consuming cultures arrived in America, they saw Europeans grinding corn and immediately understood the technique — they had been doing it for centuries. The skill that enslaved Africans brought to American cornmeal cooking explains why Southern grits is qualitatively different from Northern cornmeal porridge.

What it does

Tuwo masara made from whole corn flour retains the germ's vitamin E, B vitamins, and essential fatty acids. Corn bran contains insoluble fiber that accelerates gut transit time and reduces colon exposure to carcinogenic compounds — relevant for Black American communities with elevated colorectal cancer risk. The resistant starch formed on cooling and reheating feeds Bifidobacterium species in the colon — a prebiotic effect demonstrated in multiple fiber intervention studies. Traditional Hausa preparation uses locally ground whole-corn flour that includes the germ and bran, making it substantially more nutritious than processed American cornmeal. Corn plus legume protein (from soups) creates complete protein profile.

How it is cooked

Use whole-grain corn flour. Bring water to boil (3 cups water per 1 cup flour). Add flour gradually while stirring constantly to prevent lumps. Cook over medium heat, stirring vigorously for 10-15 minutes until mass becomes very thick and pulls cleanly from pot. Rest covered for 5 minutes. Mold into individual portions with wet hands.
