Why it is ours

Hausa and Fulani diaspora communities in the US are smaller and concentrated in specific cities. For Black American communities, this food represents an opportunity to access the Northern Nigerian starch tradition distinct from the Yoruba and Igbo foods more commonly available.

What it does

Tuwo shinkafa made from short-grain rice cooked to very high water content creates a high-amylose resistant starch profile — particularly significant when cooled and reheated. The soft, over-cooked preparation is easier to digest than al dente rice for individuals with digestive issues, irritable bowel syndrome, or inflammation-related gut conditions common in Black American populations under chronic stress (the Weathering Hypothesis effect on gut permeability). When served with miyan kuka (baobab leaf soup) — the traditional pairing — the antioxidant and fiber from baobab significantly improves the nutritional profile. Baobab leaf soup contains 6x the vitamin C of orange and high calcium content.

How it is cooked

Wash short-grain rice thoroughly. Cook in approximately 3x the normal water volume until very soft and sticky. Use mortar and pestle or food processor to pound/blend the over-cooked rice until smooth and cohesive. Alternatively, use rice flour: gradually add rice flour to boiling water, stirring continuously until thickened to a smooth, pliable consistency.
