Watermelon (Rind Included)

High water-content fruit with exceptional L-citrulline content — particularly in the white rind that most people discard. L-citrulline converts to L-arginine in the kidneys, which then converts to nitric oxide (the same vasodilatory compound produced by dietary nitrates). One standard serving of watermelon provides 150-250mg L-citrulline from the flesh; the white rind provides 2-3x more citrulline than the pink flesh per gram.

Why it is ours

Widely available and beloved across the Black community. Very affordable in season. The rind is free — already bought it. Pickled watermelon rind is a tradition in Black Southern cooking that APEX encourages as medicine.

What it does

The L-citrulline blood pressure mechanism is medically significant. L-citrulline → L-arginine → nitric oxide → vasodilation → blood pressure reduction. A 2012 RCT in the American Journal of Hypertension found watermelon extract (standardized to L-citrulline) reduced aortic blood pressure by 9 mmHg and diastolic BP by 7 mmHg in obese patients with prehypertension. The effect was strongest in the abdominal aorta — the vessel most relevant for cardiovascular disease risk. The lycopene content is second only to cooked tomatoes among whole foods. Lycopene is the specific antioxidant documented to reduce prostate cancer risk — the cancer that kills Black men at 2x the rate of white men. For erectile dysfunction: ED is now recognized as an early cardiovascular warning sign. L-citrulline from watermelon improves erectile function by the same nitric oxide pathway as sildenafil (Viagra) — without the pharmaceutical side effects. The rind contains 2-3x more citrulline than the flesh — the most nutritious part is routinely thrown away. APEX stops that waste. Pickled watermelon rind was a traditional Black Southern food — the ancestors already knew to eat the whole fruit.

How it is cooked

Flesh: eat fresh, juice with ginger + lime. Rind: pickle in traditional Black Southern fashion (apple cider vinegar + sugar + spices), blend into smoothies (neutral flavor when blended with other fruits), or juice the rind along with the flesh. Watermelon + cucumber + mint juice: excellent pre-workout or hot-weather blood pressure drink.
