Wheat fufu is a modern Nigerian swallow — plain wheat flour (or a blend of wheat flour and cassava starch) cooked into a smooth, dense swallow that mimics the texture of pounded yam. It emerged as an affordable alternative to pounded yam in Nigerian cities and is now a staple at Nigerian restaurants globally. Less stretchy than semovita, more firm than tuwo shinkafa, with a subtle wheat flavor that pairs with bold soups.

Wheat fufu is the everyday-accessible swallow for Nigerian-American households — more affordable than purchasing semovita brand, made from plain flour available at any grocery store. It represents the democratization of the swallow tradition.

What it does

Wheat fufu made from whole wheat flour retains the bran and germ fractions, contributing insoluble fiber that accelerates intestinal transit time. A faster gut transit time reduces colon exposure to secondary bile acids — carcinogens implicated in colorectal cancer, which affects Black American communities at disproportionate rates. The wheat protein forms an elastic network that slows gastric emptying, extending satiety — relevant for Black American communities managing weight. When wheat fufu is cooled and reheated, retrograde starch forms resistant starch (RS3), lowering the glycemic index from approximately 70 to 55 — meaningful for T2D management. Iron fortification in commercial wheat flour means wheat fufu delivers bioavailable fortified iron with every meal.

How it is cooked

Boil water. Add wheat flour gradually while stirring constantly to prevent lumping. Work over medium heat, stirring and turning vigorously for 6-10 minutes until smooth and homogeneous. The final product should be denser than semovita and hold its shape when formed into a ball. For lower glycemic impact: cook, let cool 20 minutes, then gently reheat.
