White Chia Seed

Why it is ours

Chia is an affordable, shelf-stable way to get plant omega-3, fiber, and calcium into the diet without fish or dairy — a flexible seed that slips into the foods families already eat. Its blood-sugar-steadying gel makes it especially useful where diabetes runs in the family.

What it does

Chia carries a high load of the plant omega-3 ALA, entering the ALA-to-EPA conversion pathway to supply anti-inflammatory building blocks for heart and brain. Its standout trait is soluble fiber that forms a gel in water and in the gut, slowing carbohydrate absorption to blunt blood-sugar spikes — a real tool against the T2D that hits Black communities hard. Ounce for ounce chia carries more calcium than milk, supporting bone density, and its magnesium feeds the mineral most Black Americans lack. The gel also eases constipation and promotes fullness.

How it is cooked

Soak 1-2 tablespoons in water, milk, or juice for 15-20 minutes until it gels — or stir into oatmeal and smoothies where the dish's liquid hydrates it. Make chia pudding overnight with milk and fruit. Unlike flax, chia does not need grinding; whole seeds are fully digestible. Always consume with adequate liquid.
