Why it is ours

For families and elders who 'can't eat beans' because of gas, anasazi beans reopen the door to the cheapest complete protein available. Their easy digestibility makes budget-tier plant protein accessible to people who had given up on it.

What it does

Anasazi beans are documented to contain fewer of the oligosaccharides that cause bean-related gas, making them gentler for people building a higher-fiber diet. They still deliver the full cardiometabolic benefit of beans: soluble fiber for cholesterol and glucose control, folate, iron, and the potassium that counters sodium-driven blood pressure. How it is cooked

Soak overnight, discard the water, and simmer about 1-1.5 hours; they cook faster and require less soaking than many beans and need no presoak in a pinch. They hold a beautiful color and sweet flavor — minimal seasoning required.
