What it does

Marrow beans deliver hearty plant protein and soluble fiber for cholesterol reduction and glucose control, with a naturally savory, meaty depth that lets cooks lean less on cured pork for flavor — a direct lever against the high-sodium, high-saturated-fat seasoning meat that drives hypertension in Black Southern cooking. How it is cooked

Soak overnight, discard the water, and simmer 1.5-2 hours until lusciously creamy. Their meaty flavor means they need little more than onion, garlic, bay, and a bit of olive oil to make a satisfying pot.
