Why it is ours

BBQ chicken at a Black cookout is a different event than a fried chicken dinner. The cookout is communal, outdoor, extended — an entire cultural institution organized around the grill. Chicken cooks alongside ribs, hot links, and burgers. Who mans the grill is a position of authority and family pride.

What it does

Smoked or grilled chicken is one of the leanest high-protein cookout foods available. Skin-on cooking retains moisture; removing skin before eating reduces saturated fat substantially. Wood smoke adds no meaningful nutritional content but substantially changes the cultural and sensory experience. Charring at high heat produces heterocyclic amines — low and slow reduces this risk.

How it is cooked

Dry rub at least 4 hours before, overnight is better. Cook on indirect heat — not directly over the flame. Gas grill: one burner off, chicken on that side. Charcoal: coals banked to one side. Internal temp 165°F in the thigh. Sauce goes on in the last 10-15 minutes only — earlier and it burns.
