Why it is ours

Tomato gravy over biscuits was a Carolinas and Virginia Black household breakfast before any of the dishes that now appear on Southern restaurant menus. It was made from pantry staples — canned tomatoes, flour, fat, and leftover biscuits — and it stretched breakfast ingredients into a full plate.

What it does

Tomato gravy delivers meaningful lycopene — a carotenoid with strong evidence for prostate cancer prevention and cardiovascular benefit. Cooked tomatoes release lycopene more effectively than raw. This is a humble breakfast with a real nutritional argument. The biscuit is the high-glycemic component — quality matters.

How it is cooked

Start with bacon drippings or butter. Add diced or crushed tomatoes — canned work well. Add a pinch of sugar to balance acidity. Simmer until thick, 15-20 minutes. Season with salt, black pepper, and a splash of the biscuit pan drippings if available. It should coat the back of a spoon.
