Why it is ours

Country Captain appears in historical records of South Carolina and Georgia Black communities dating to the early 1800s. It reflects the port city spice trade that connected the Lowcountry to the Gold Coast. The dish is obscure in mainstream food culture but recognized immediately in Black Carolinas and Georgia households.

What it does

Curry powder in this dish is a proxy for the complex spice blends of the West African Gold Coast — turmeric, coriander, cumin, and pepper all have documented anti-inflammatory properties. The tomato base provides lycopene. Raisins add iron and natural sugar. This is an anti-inflammatory chicken dish coded as Southern comfort food.

How it is cooked

Brown the chicken pieces in a Dutch oven or heavy skillet before adding the tomatoes and spices. The curry flavor should be bloomed in the fat before the liquid goes in. Low simmer 30-45 minutes until the chicken is tender and the sauce has reduced into a thick stew. Serve over white rice.
