What it does

Standard biscuits provide minimal nutritional benefit — primarily refined carbohydrate and saturated fat. The glycemic load of two biscuits per serving is high (~35 GL).

How it is cooked

Classic technique: cold butter cut into flour until pea-sized, cold buttermilk added until just combined, folded 2–3 times, cut with a sharp biscuit cutter (no twisting), baked at 450°F.
