Red Rice (Gullah)

Why it is ours

Red rice is on every Gullah Geechee table at family reunions, church dinners, and holiday meals. It is the constant — the dish everyone argues about who makes best.

What it does

Tomatoes cooked in fat release lycopene more bioavailably than raw. Lycopene is associated with reduced prostate cancer risk — Black men face 2.2x higher prostate cancer mortality than white men.

How it is cooked

Cook diced tomatoes with onion and smoked sausage until the liquid reduces and the tomato deepens. Add rice and stock in a 1:1.75 ratio, cover tight, and cook on low until rice absorbs all liquid. Do not lift the lid. A slight crust on the bottom is traditional.
