What it does

Broccoli microgreens deliver a concentrated dose of glucoraphanin, the precursor the body converts to sulforaphane — the most evidence-backed plant compound for Nrf2 activation, the master switch that turns on the body's own detoxification and antioxidant genes. Microgreens carry 4-40x the nutrient density of mature broccoli by weight. Sulforaphane research (Talalay, Johns Hopkins) links it to cancer-cell defense, reduced inflammation, and improved insulin signaling. To convert glucoraphanin to active sulforaphane, the enzyme myrosinase must be present — chop, chew thoroughly, or pair with a pinch of mustard powder if cooked.

How it is cooked

Eat raw to preserve the heat-sensitive myrosinase enzyme. Snip with scissors above the soil line, rinse gently, spin dry. Pile onto sandwiches, fold into wraps, top eggs, or blend a small handful into a smoothie. Grow them yourself: scatter seed on a damp paper-towel or shallow tray of soil, keep moist, harvest in 7-14 days.
