What it does

Like all brassica microgreens, radish shoots carry glucosinolates that the body converts to detoxifying, Nrf2-activating isothiocyanates — the same family of cancer-defense compounds as broccoli sprouts, with a sharper peppery kick. Microgreens pack 4-40x the vitamin density of the mature root. The purple Sango variety adds anthocyanins for extra antioxidant load. Among the fastest, most reliable windowsill crops — ready in 6-10 days.

How it is cooked

Eat raw to keep the heat-sensitive enzymes intact. Snip above soil line, rinse, dry. Their bold bite stands up as a finishing green on tacos, eggs, sandwiches, and rich braises. Grow on a shallow tray of soil or fine mat, keep moist, harvest in 6-10 days.
