Why it is ours

Cabbage is cheap, Southern, and everywhere; growing its microgreen turns a few cents of seed into a sweeter, more nutrient-dense fresh green any week of the year.

What it does

Cabbage microgreens concentrate the glucosinolates — sulforaphane and indole-3-carbinol precursors — that drive brassica's detox and cancer-defense reputation, at multiples of the mature head's density. Indole-3-carbinol is specifically studied for estrogen metabolism, relevant to fibroid and hormone-sensitive concerns common among Black women. Sweeter and crunchier than most microgreens, with vitamin C to support iron and immunity. Eat raw to keep the enzymes intact.

How it is cooked

Grow from cabbage seed on a soil tray; harvest at 8-12 days. Snip, rinse, dry. Eat raw in slaws, salads, tacos, and sandwiches; their crunch makes a fresh living slaw on its own with a vinegar dressing.
