Why it is ours

A gentle, sweet, easy-to-love microgreen — a low-resistance way to get brassica medicine into a household, including children, grown cheaply on a windowsill.

What it does

Kale microgreens carry glucoraphanin and other glucosinolates that convert to sulforaphane-family compounds — the Nrf2-activating detox and cancer-defense chemistry — at 4-40x the concentration of mature kale. They also deliver lutein and zeaxanthin for eye health and vitamin K and calcium for bone. Milder and less bitter than grown kale, so easier for kids and sprout-skeptics. Eat raw to keep the enzyme that forms sulforaphane active.

How it is cooked

Grow from kale seed on a soil tray; harvest at 8-12 days. Snip above soil, rinse, dry. Eat raw in salads, smoothies, sandwiches, and grain bowls. Their mildness lets them go anywhere a tender green would.
