Callaloo Soup

Creamy, thick soup made by simmering callaloo leaves (or spinach as substitute) with coconut milk, okra, and crab or saltfish. Rich in iron (from the leafy greens — equivalent to collard greens in iron content), calcium, folate, vitamin K, and the healthy fats from coconut milk. Okra contributes soluble fiber (okra mucilage). Crab or saltfish adds complete protein and B12.

What it does

How it is cooked

Sauté onion + garlic + scotch bonnet pepper. Add callaloo leaves (or spinach + a little Swiss chard as substitute). Add coconut milk + sliced okra + crab claws (or saltfish). Simmer 15-20 min. Blend slightly or leave chunky. Season with thyme + all-purpose seasoning + salt. Serve with provision (dumplings, yam, banana).
