What it does

Pepper soup is arguably the most sophisticated medicinal food preparation in West African cuisine. The spice stack simultaneously delivers: (1) thymol from efinrin (bactericidal against respiratory pathogens); (2) kaurene diterpenes from grains of Selim (antimicrobial, anti-plasmodial); (3) myristicin and elemicin from ehuru/calabash nutmeg (antimicrobial, neurological effects); (4) utazi's chlorogenic acid and luteolin (anti-inflammatory, liver protective); (5) bone broth collagen (gut lining repair, joint health). The postpartum use reflects traditional knowledge of what healing tissue requires: collagen for wound repair, minerals for blood replenishment, galactagogue herbs for milk stimulation, and warming compounds for circulation restoration after birth. How it is cooked

Base spice blend (ground): African pepper (grains of Selim) + ehuru (calabash nutmeg) + uziza seeds. Add meat of choice + water. Simmer 30-45 min. Add dried crayfish + efinrin leaves + fresh uziza leaf + utazi leaf in last 10 min. Season with salt. Serve hot. Pepper soup spice mixes are available pre-ground at West African stores.
