Resistant starch feeds beneficial gut bacteria. The protein-fiber combination creates satiety that reduces overall caloric intake.

How it is cooked

Canned chickpeas are as nutritious as dried and far more convenient — rinse well to reduce sodium. Use in salads, make hummus, roast at 400F for 30 minutes as a crunchy snack, add to soups. Cook dried chickpeas overnight in water, drain, then simmer 1-2 hours.
