APEX Legacy · a way of life

Delicata Squash

A small, oblong cream-and-green striped winter squash with sweet flesh and a thin edible skin, so easy to prepare that it is called sweet potato squash — no peeling, quick roasting, naturally sweet.

Why it is ours

Delicata's no-peel, fast-roasting simplicity makes vegetables approachable for busy households — a low-effort entry point to winter squash for people without time or energy for hard-rind squashes.

What it does

Delicata offers beta-carotene for vision and immunity and soluble fiber that smooths the blood-sugar curve, all in a form so easy to cook that it lowers the barrier to eating vegetables daily. Its edible skin keeps the fiber intact, and its potassium content supports blood-pressure regulation. The ease of preparation is itself a health feature — convenience drives consistency.

How it is cooked

No peeling needed. Halve lengthwise, scoop the seeds, slice into half-moons, toss with oil and roast at 425°F for 20-25 minutes until caramelized. The skin is thin and fully edible. Quick enough for a weeknight side.
